Roasted sweet potatoes with cayenne pepper, tamarind sauce and chicken here is the recipe

Sweet potatoes and pepper masala with Tamarind and Chicken... roasted sweet potatoes with cayenne pepper, tamarind sauce and chicken here is the recipe


What you will need:- .

3 whole large sweet potatoes

400g chicken breast

Juice of 1 lemon

1 teaspoon cayenne pepper

1 teaspoon salt

1/2 teaspoon garlic ginger paste

1/2 teaspoon turmeric powder

1/2 cup white flour

Tamarind sauce for serving

What to do 


Cut the Chicken breast into two to make them thinner, do the same with the rest of the chicken breast sprinkle some turmeric powder and then sprinkle some Cayenne pepper add in some salt and then squeeze the lemon juice add in the garlic ginger paste massage the chicken ensuring that all the flavors are distributed all over the chicken.

 Sprinkle the white flour turn the chicken on both sides so that the flour can be distributed all over the chicken and mix well with the marinade place the chicken over your baking tray and put in the oven at 180°C for about 30 minutes or until the chicken is golden brown.

For the sweet potatoes
Ensure the sweet potatoes are washed and clean remember you don’t want to remove the skin when you’re roasting whole sweet potatoes then place them in an oven at 200°C for about 40 minutes to 1 hour or until the sweet potatoes are soft and tender towards the inside.

Once everything is ready remove from the oven cut the potatoes into two and prick in the center or make some Strokes using a knife and then sprinkle some Cayenne pepper salt and the tamarind sauce place on the Same pan that you roasted the chicken, garnish with a little bit of some curry leaves and then sprinkle over some tamarind sauce and you are ready to serve your roasted sweet potatoes and chicken that is healthy. Enjoy.

Cheesy Beef Recipe

Cheesy beef githeri this recipe is very easy-to-whip-up, we will add a bit of mozarella and cheddar cheese to make our githeri more fun and exciting.

How To Cook Cheesy Beef

What you will need:

250g dry beans soaked and boiled (maharagwe)

250g fresh maize/sweet corn, boiled

500g beef steak cubed

1 onion sliced

1 teaspoon garlic ginger paste

1 tablespoon oil

1 teaspoon curry powder

2 knorr beef cubes (salted)

100g cheddar cheese grated

100g mozzarella cheese grated

3 tablespoon white vinegar

70g tomato paste

1 cup water

What to do:

Sprinkle the vinegar on the beef and mix well. This will help tenderise it. Add salt and mix well then put it aside for about 30 minutes.

In a pan over medium heat, add the oil and then sauté the beef to seal pores. Once the beef is browned, add the turmeric powder and continue to mix well.

Add the garlic ginger paste and beef bouillon cube. Note that the beef bouillon cubes have extra salt so you don’t want to add any more salt. Continue to mix until the liquid evaporates.

Once the beef starts to fry, add the sliced onions and continue to mix. Now add in the boiled beans and corn. Continue to stir until well combined.
Add the tomato paste and mix well. Add one cup of water and stir a little bit and then cover with a tight lid. Bring it to a boil until the beef, beans and maize are tender.

Open the lid and sprinkle the cheddar and mozzarella cheese on top. Cover for another two minutes so that the cheese can melt and then you are ready to serve your cheesy beef githeri just on its own. Garnish with a few curry leaves and enjoy the meal.
